My plan to do mine was going to use:
Chokes: 34-36mm
Idle Jets: 60, 65 (much larger than normal)
Mains: 140, 145
Emulsion tube: 7772.5 - 7772.7
Air corrector: 180, 190
Auxiliary Venturi: 7848.3, 7848.1
Accelerator pump jets: ~40
I have a very similar setup to you, and your guess seems on the money. I'm inclined to go a little 'over size' because of what you're asking from the twin 40's.
Parts were hard to find, and everyone's nagging of "40's are too small" got to me. As such, i just bought some 45 Webers...
